HMSHost Brings Historic L’Auberge Saint-Gabriel Restaurant to Montréal–Trudeau International Airport

New restaurant offers travellers an elegant, gourmet dining experience

MONTRÉAL — Travellers can now indulge in the tastes that make Montréal an international dining destination with the addition of historic fine dining establishment L’Auberge Saint-Gabriel to Montréal–Pierre Elliott Trudeau International Airport. Built in 1688 in Old Montréal and the first operational inn in North America, L’Auberge Saint-Gabriel is a true legend that has made itself one of the trendiest dining and event spots in a city internationally renowned for its food and nightlife.

Global restaurateur HMSHost, Aéroports de Montréal, and L’Auberge Saint-Gabriel representatives celebrated the first airport location of this restaurant renowned for its Quebec cuisine with a ribbon cutting and grand opening celebration.

Located in the terminal’s international jetty, L’Auberge Saint-Gabriel offers an inviting and open layout with dedicated restaurant, lounge, and bistro bar areas. Echoing the feeling of dining at the L’Auberge Saint-Gabriel in Old Montréal, travellers will find a modern, warm, and distinguished ambiance to sit back and relax before their travels. Stained glass in L’Auberge Saint-Gabriel’s signature red brightens the space, along with floor-to-ceiling windows perfect for plane-watching while dining on dishes that have made the reputation of L’Auberge Saint-Gabriel as one of the most famous Montréal restaurants.

This new gourmet stopover will enhance the brand’s visibility. “Our Old Montréal establishment is already a top destination for tourists visiting the city,” explains L’Auberge Saint-Gabriel co-owner Marc Bolay. “Now with a presence at Montréal–Trudeau, we will leave them with a lasting impression as they are able to enjoy the Saint-Gabriel experience right up until their departure.”

HMSHost brought L’Auberge Saint-Gabriel Chef Émilie Rizzetto to the airport location to craft its classic upscale casual cuisine. Travellers will savour dishes such as roasted Cornish game hen; pan-seared salmon filet; stout braised pork shoulder; beef or salmon tartars; duck confit sandwich; and the famous L’Auberge Saint-Gabriel charcuterie and cheese platters.

For morning travellers, L’Auberge Saint-Gabriel offers breakfast delights such as poached eggs on a handmade Danish with hollandaise mustard sauce; tarts featuring mushrooms, bacon, and poached eggs; and French toast with stewed fruit and lemon zest mascarpone.

To accompany their gourmet meal, travellers can choose from an extensive option of local and imported fine wines, which are on display in the restaurant’s dining room, as well as a selection of cocktails and draft and bottled beer offerings.
